When I had fewer kids and more energy, I would really go all out when it came to birthday cakes. I made Thomas the Tank Engine cakes; Dalmatian cakes; Cinderella/Little Mermaid/Sleeping Beauty cakes; cakes upon which intergalactic Star Wars battles were re-enacted.
These days, I can't help but feel my children are being shortchanged somehow. It seems like it's all Chocolate Lace Cake, all the time.
Oh, well. They're great kids; they don't complain. Here's newly-nine-year-old Hope, last night, thinking up a really good wish while we sing to her.
And it's a pretty dang fantastic cake, I must say. If you are a serious baker, you must own Rose Levy Beranbaum's The Cake Bible. To make Chocolate Lace Cake, use Rose's Chocolate Butter Cake and Neoclassic Chocolate Buttercream Frosting recipes. Then follow my instructions here to make the lace.

It's beautiful AND chocolate. What else could you really need in a cake?
I used to do the big fancy ones, too. No more. My kids are lucky if I bake the cake instead of buy it.
Chocolate Lace looks pretty easy, though, maybe I'll do it for the next b-day girl in May.

As is the sentiment with the other bloggers, your kids are so blessed! The cake is fab.
My daughter's ninth is coming up and I'll probably go with a store-bought cake (again). However, as long as it contains copious amounts of chocolate, my girl doesn't mind!
If anyone ever complains about one of your cakes, just give them your sweetest smile. Then carefully box up the cake and send it my way.

Happy Birthday Hope. Great looking cake. I think I might try that one time. I am guessing it will work pretty good on an ice-cream cake too, since my kids only want ice-cream cakes for their birthdays.

If its a comfort, my favorite thing about birthdays was having plain old box cake in a 13x9 pan. I always felt pity for other kids who had fancy different cakes, even ice cream cakes, each year. Who wants it?
I'm not even a little bit kidding, and I still feel the Exact Same Way. (sure hope my kids do too)
